  1. Place the smoked haddock fillets in a large pan, covering them with the water. If using, add the bay leaf. Bring to a simmer and cook for about 10 minutes until the fish is firm and fully cooked.
  2. Using a slotted spoon, remove the haddock from the pan. Set them aside to cool. Keep the fish-infused water as it will be used as a tasty base for the soup.
  3. In the same pan, add the chopped onion and optional garlic. Simmer until they have softened.
  4. Meanwhile, skin the haddock fillets and flake them into chunky pieces, ensuring all bones are removed.
  5. Add the diced potatoes to the pan, followed by the flaked haddock. Pour in the milk. If you’re using leeks, add them now.
  6. Season the soup with salt and freshly ground pepper. Cook for 20-30 minutes. The potatoes should be tender, and the soup will have taken on a creamy consistency.
  7. Ladle into bowls and garnish with freshly chopped parsley.
