Description
Cullen Skink. The name might sound peculiar, but this traditional Scottish soup guarantees comfort with every sip. Hailing from the town of Cullen in Moray, Scotland, it brilliantly combines smoked haddock, potatoes, and onions for a hearty dish. Expect a rich, smoky flavor and a texture ripe with chunky satisfaction.
Ingredients
- 450 grams of smoked haddock fillets
- 1 medium-sized onion, finely chopped
- 1.5 litres of water
- 500 grams of potatoes, peeled and finely diced
- 200 ml of full-fat milk
- Salt to taste
- Freshly ground black pepper to taste
- Freshly chopped parsley for garnish
Optional Ingredients
- 1 Bay leaf: Adds a hint of floral and herbal aroma to the soup, subtly enhancing the smokiness of the haddock.
- 2-3 cloves garlic, minced: Introduces a pungent depth to the dish that enriches the overall flavor.
- 2 leeks, finely chopped: Provides a sweet, mild onion taste that further ties together the main ingredients.
Estimated Time

- Cook time: 45 minutes
Instructions
- Place the smoked haddock fillets in a large pan, covering them with the water. If using, add the bay leaf. Bring to a simmer and cook for about 10 minutes until the fish is firm and fully cooked.
- Using a slotted spoon, remove the haddock from the pan. Set them aside to cool. Keep the fish-infused water as it will be used as a tasty base for the soup.
- In the same pan, add the chopped onion and optional garlic. Simmer until they have softened.
- Meanwhile, skin the haddock fillets and flake them into chunky pieces, ensuring all bones are removed.
- Add the diced potatoes to the pan, followed by the flaked haddock. Pour in the milk. If you’re using leeks, add them now.
- Season the soup with salt and freshly ground pepper. Cook for 20-30 minutes. The potatoes should be tender, and the soup will have taken on a creamy consistency.
- Ladle into bowls and garnish with freshly chopped parsley.
- Serve with crusty bread and enjoy a bowl of hearty, traditional Cullen Skink.
