Description
Kharcho, a Georgian beef and walnut soup, is known for its depth of flavors imparted by the plums, walnuts, aromatic herbs, and spices. Its distinctive robust flavor and a hint of piquancy is comfort in a bowl.
Ingredients
- 500 grams of beef (preferably with bones for added flavor)
- 100 grams of shelled walnuts
- 3 medium tomatoes
- 1 onion
- 4 cloves of garlic
- 1 red bell pepper
- 50 grams of fresh coriander
- 50 grams of fresh parsley
- 3 bay leaves
- 1 teaspoon of dry coriander
- ½ teaspoon of black pepper
- Salt to taste
- 2 tablespoons of vegetable oil
- 1 liter of water
Optional Ingredients
- 50 grams of Tklapi (sour plum puree) - it can add a tangy note to the deep, rich flavors.
- 1 teaspoon Utskho Suneli (Georgian spice mix) - it can enhance the multi-dimensional spice profile.

Instructions
- Start by cutting the beef into small chunks, roughly around two inches in size.
- Heat the vegetable oil in a deep, heavy-bottomed pot, add the beef, and brown all sides of the meat.
- Add the finely chopped onion to the pot, along with the bay leaves, and keep stirring until the onions become translucent.
- Pour into the pot 1 liter of water and bring to a gentle boil. Let the meat simmer in the broth under a lid for about 1 hour.
- While the meat is simmering, prepare the rest of the ingredients. Puree the tomatoes, bell pepper, and garlic in a blender.
- Next, grind the walnuts to make a coarse paste. Mix this with the pureed vegetables.
- Add this mixture to the pot after the meat has simmered for an hour, followed by the dry coriander and black pepper. If you’re using the optional Tklapi and Utskho Suneli, add them at this stage.
- Leave the soup to simmer for another 30 minutes, stirring occasionally. Taste it and adjust the salt.
- Finally, add the fresh coriander and parsley, finely chopped, and let the soup rest for about 20 minutes before serving.
