Description
A fragrant, warming soup with the distinct flavor of fennel balanced with creamy potatoes, all tied together in a rich homemade stock. This is a traditional homemade recipe that offers a burst of light, anise-like flavors as well as the comforting, earthy goodness of fresh vegetables and herbs.
Ingredients
- 2 large fennel bulbs, trimmed and thinly sliced
- 2 medium potatoes, peeled and diced
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 4 cups of homemade chicken or vegetable broth
- 2 tablespoons olive oil
- salt and pepper to taste
- fresh fennel fronds for garnish
Optional Ingredients
- 1 splash of Pernod: This complements the anise-like flavor of fennel and adds a bit more depth to the soup.
- 1/2 cup heavy cream: For a more luxurious, creamy texture.
- zest of one lemon: It enhances the fennel with its citrusy notes, adding a fresh brightness to the soup.

Instructions
- Heat olive oil in a large pot over medium heat.
- Add the onion and garlic, sauté until the onion is translucent and the garlic is fragrant.
- Add sliced fennel and diced potato to the pot. Stir until the fennel starts to soften.
- Pour in the homemade broth. Bring the mixture to a boil.
- Lower the heat and let it simmer until the fennel and potatoes are fully cooked and tender.
- Optional: Add in a splash of Pernod, if desired.
- With a blender, puree the soup until smooth.
- Optional: Stir in the heavy cream and heat the soup again over low heat. Adjust the seasoning with more salt and pepper if necessary.
- Serve hot, garnished with fennel fronds and optional lemon zest.
