Description

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion and garlic, sauté until the onion is translucent and the garlic is fragrant.
  3. Add sliced fennel and diced potato to the pot. Stir until the fennel starts to soften.
  4. Pour in the homemade broth. Bring the mixture to a boil.
  5. Lower the heat and let it simmer until the fennel and potatoes are fully cooked and tender.
  6. Optional: Add in a splash of Pernod, if desired.
  7. With a blender, puree the soup until smooth.
  8. Optional: Stir in the heavy cream and heat the soup again over low heat. Adjust the seasoning with more salt and pepper if necessary.
  9. Serve hot, garnished with fennel fronds and optional lemon zest.
