Instructions

  1. In a large pot or dutch oven, Sauté the onion, carrots, and celery in oil over medium heat until softened.
  2. Stir in the minced garlic, thyme, rosemary, and bay leaf. Sauté till fragrant.
  3. Deglaze the pan with white wine if using or with some broth, making sure to scrape any bits stuck at the bottom of the pan.
  4. Add in the broth, kernel corn, and crab meat.
  5. Simmer the soup for about 30 minutes, or until the crab is cooked thoroughly and the flavors meld together.
  6. Season with salt and pepper, then stir in parsley if using.
  7. Ladle into soup bowls and finish with a sprinkle of smoked paprika if desired.
