  1. In a large heavy pot, melt the butter with the olive oil over medium heat.
  2. Add onions and garlic to the pot. Cook, stirring occasionally, until onions are soft and caramelized. This takes about 40 minutes. Patience is key here; the deep, sweet flavor develops with slow caramelization.
  3. Increase heat to medium-high, add sugar and flour to the pot, stirring constantly for about 2 minutes.
  4. Deglaze the pot with white wine, scraping up any brown bits from the bottom.
  5. Stir in the beef broth, thyme, bay leaves, salt and pepper.
  6. Bring the soup to a simmer, cover the pot and reduce heat to low. Let the soup simmer for about 40 minutes.
  7. Preheat your broiler. Ladle soup into ovenproof bowls. Top each bowl with the toasted baguette slices and sprinkle generously with Gruyère cheese.
  8. Place the bowls on a baking sheet and put under the broiler. Broil until cheese is melted and bubbly.
  9. Serve your homemade French Onion soup hot and enjoy!
