- 6 cups of vegetable broth
- 2 tablespoons of olive oil

Instructions

- Add the cleaned lentils to the pot, stir to coat with the vegetables and spices.
- Pour in the vegetable broth, turn the heat to high and bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 30 minutes or until the lentils are soft.
- Season the soup with salt and pepper. Optional ingredients can be added at this stage.
- Serve right away while it’s warm.
