  1. Rinse the red lentils under cold water until the water runs clear. Drain and set aside.
  2. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sauté until translucent.
  3. Add the carrots and cook until they start to soften.
  4. Stir in the spices (cumin, turmeric, paprika) and cook for another minute.
  5. Add the cleaned lentils to the pot, stir to coat with the vegetables and spices.
  6. Pour in the vegetable broth, turn the heat to high and bring to a boil.
  7. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 30 minutes or until the lentils are soft.
  8. Season the soup with salt and pepper. Optional ingredients can be added at this stage.
  9. Serve right away while it’s warm.
