  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, carrot, and celery to the pot; sauté until the vegetables start to soften and onion becomes translucent.
  3. Mix in minced garlic, and continue to cook for another minute, or until garlic is fragrant.
  4. Add the chopped cabbage, canned diced tomatoes (with juice), thyme, bay leaf, salt and pepper to the pot. Stir well.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. After boiling, reduce heat to a simmer; cover the pot.
  7. Allow soup to simmer for about 20-25 minutes, until the cabbage and other vegetables are tender.
  8. Before serving, remove the bay leaf, adjust seasoning if needed. If using, mix in the optional ingredients (smoked paprika, Worcestershire sauce, minced parsley).
  9. Ladle heaping portions into bowls, serve hot.
