  1. Heat olive oil in a large pot over medium heat.
  2. Add carrots, onion, and celery to the pot. Sauté until vegetables soften and onion is translucent.
  3. Add the chopped apples to the pot, stir and cook for about 5 minutes until the apples become soft.
  4. To the pot, add the vegetable broth, cinnamon, salt, and pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat. Let it simmer for 20 minutes.
  6. After vegetables and apples are cooked thoroughly, puree the soup using an immersion blender until it reaches a uniform, smooth texture.
  7. Serve hot, garnish with a sprinkle of nutmeg or a handful of walnuts if desired.
