  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions to the pot and sauté until they become translucent.
  3. Then add the garlic and continue to sauté for another 2 minutes until fragrant.
  4. Add in the beets, carrots, and thyme, stir well, and cook for about 5 minutes.
  5. Pour in the vegetable stock, bring the soup to a boil, then lower the heat to a simmer.
  6. Cook until the beets are tender, approximately 25 minutes.
  7. Use a hand blender to carefully puree the soup until smooth.
  8. Season with salt and pepper to taste, and add in a squeeze of lemon juice. If using red wine vinegar, add it now.
  9. Serve hot garnished with fresh parsley, and if desired, a dollop of sour cream or Greek yogurt.
