  1. Rinse the peanuts thoroughly and soak them in water for a minimum of six hours or overnight.
  2. Heat the vegetable oil in a large pot over medium heat. Add the onion, garlic, carrot, bell pepper, and celery. Cook until the vegetables are soft, about 10 to 15 minutes.
  3. Drain the peanuts and add them to the pot along with the diced potato. Sauté the ingredients for another 2 to 3 minutes, until the peanuts are lightly toasted.
  4. Next, pour in the vegetable broth, add salt and pepper, and bring the mixture to a boil.
  5. Once boiling, reduce the heat to low and let the soup simmer till the peanuts and potatoes are tender. This will take about 20 minutes.
  6. Once cooked, use a blender or stick blender to puree the soup till it’s creamy and smooth. If the consistency feels too thick, add a little more broth.
  7. Serve the soup piping hot, sprinkled with fresh parsley.
