Instructions

  1. Rinse spinach leaves thoroughly under cold water. Drain well, and chop roughly.
  2. In a large pan, heat the vegetable oil. Add in the diced onion, and cook until it turns translucent.
  3. Add in the minced garlic and sauté until fragrant.
  4. Add the chopped spinach to the pan. Cook until wilted.
  5. Pour in the vegetable stock, and bring the mixture to a boil.
  6. Lower heat and let the soup simmer for about 20 minutes.
  7. At this point, you may optionally blend the soup for a smoother texture.
  8. Season with salt and pepper. If using, add in the optional ingredients.
  9. Serve the soup warm. Enjoy its nourishing wholesomeness.
