  1. Clean the artichokes, removing the tough outer leaves and cutting the inner parts into quarters.
  2. Peel and chop the potatoes, onions, and garlic into small, manageable pieces.
  3. In a large pot, heat the olive oil over medium heat. Add onions and garlic, cooking until translucent and aromatic.
  4. Add artichokes and potatoes to the pot, stirring to combine. Cook on medium heat for around 5-10 minutes, until the vegetables begin to soften.
  5. Pour the vegetable stock into the pot, bringing the mixture to a boil.
  6. Once boiling, reduce heat and allow the soup to simmer for 30 minutes, or until the artichokes and potatoes are thoroughly cooked and soft.
  7. Use a blender or hand immersion blender to puree the soup until smooth.
  8. Season with salt and pepper according to your taste.
  9. If using any optional ingredients, sprinkle or drizzle them over the top before service.
