Bean Soup

Description

Our traditional Bean Soup is a hearty and comforting dish, perfect for cold winter days. It is packed with flavorful beans and vegetables, giving it a thick consistency and a rich, savory taste. The soup benefits from slow simmering, allowing the flavors to meld together in harmony.

Instructions

  1. Drain the soaked beans.
  2. In a large soup pot, saute the onions, carrots, celery, and garlic over medium heat until they start to soften.
  3. Stir in the canned tomatoes, vegetable stock, thyme, rosemary, drained beans, salt, and pepper.
  4. Add ham hock or bay leaf now, if using.
  5. Bring soup mixture to a boil, then reduce heat and let it simmer for about 2 hours.
  6. Check seasonings and adjust if necessary.
  7. If using, chopped parsley can be stirred in about 5 minutes before serving.
  8. Serve hot, with optional hot sauce to taste.
