Chicken Noodle Soup

Instructions

  1. In a large stockpot, place the chicken pieces. Cover with the water.
  2. Bring the water to a boil over medium-high heat. Reduce the heat to low and let it simmer for about 1 hour.
  3. Remove the chicken pieces from the pot. Let them cool and then take the meat off the bones. Discard the bones and skin.
  4. Return the chicken meat to the pot. Add the carrots, celery, onion, garlic, and bay leaves.
  5. Increase the heat to medium and let the soup simmer for another 30 minutes, or until the vegetables are tender.
  6. Add the noodles to the pot. Let them cook for about 10 minutes, or until tender.
  7. Season the soup with salt and pepper to taste. Discard the bay leaves.
  8. Ladle the soup into bowls. Garnish with fresh parsley before serving.
