Instructions

  1. Start by heating a bit of oil in a large pot.
  2. Add the cubed meat and brown it on all sides. Remove and set aside.
  3. In the same pot, add the diced onions and minced garlic and sauté until onions are translucent.
  4. Return the meat to the pot, add the sliced carrots, sliced celery, diced potatoes, canned tomatoes with their juice, and beef broth.
  5. Add in the dried basil and oregano, and season with salt and pepper. For optional ingredients, also add fresh thyme, bay leaves, and/or a splash of red wine.
  6. Bring the pot to boil. Once boiling, reduce the heat and let it simmer, covered, for about two hours.
  7. Check and stir occasionally to ensure that all ingredients are cooked well, and the flavors are well blended.
  8. Once cooked, remove from heat and serve hot.
