  1. Begin by preparing the Laksa paste. Combine the shallots, garlic, ginger, lemongrass, chillies, coriander, turmeric, and shrimp paste in a food processor and blend into a smooth paste. If needed, add a little water to help facilitate the process.
  2. Heat the vegetable oil in a large pot over medium heat. Add the Laksa paste and sauté until fragrant.
  3. Pour in the chicken stock and bring it to a boil. Lower the heat and add the chicken slices. Let it simmer until the chicken is fully cooked.
  4. Add the coconut milk to the pot. Stir well and bring it back to a simmer.
  5. Add the mixed seafood and cook until done, approximately 3-4 minutes.
  6. Salt the broth to taste.
  7. In a separate pot, cook the rice noodles as per package instructions, then drain.
  8. Arrange the cooked noodles in individual serving bowls. Pour over the soup, ensuring each bowl gets a good mix of seafood, chicken, and broth.
  9. Top each bowl with a halved hard-boiled egg, bean sprouts, fresh coriander, and a squeeze of lime just before serving.
