  1. Rinse and drain peas, checking for any grit or stones.
  2. In a large pot, add peas, ham hock, carrots, celery, onion, garlic, and water.
  3. Add a bay leaf, salt, and pepper to taste.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 2 hours, or until the peas are tender.
  5. Remove the ham hock from the pot, let it cool slightly before pulling off the meat.
  6. Return the meat to the soup, adjust the seasonings with salt, and pepper.
  7. Add optional ingredients now if desired. Remember, a few drops of liquid smoke, sprigs of thyme, and a pinch of cayenne pepper can blend well.
  8. Simmer for an additional 15 minutes.
  9. Serve hot, with a side of fresh crusty bread.
