  1. Using a sharp knife, cut the kernels off the corn cobs and set aside.
  2. Melt the butter in a large pot over medium heat.
  3. Add the chopped onions, garlic, and a pinch of salt to the pot. Sauté until onions are translucent.
  4. Mix in the potatoes and let it cook for a few minutes.
  5. Add the corn kernels and the broth. Let it simmer for about 30 minutes until potatoes are fork-tender.
  6. With an immersion blender, partially blend the soup leaving some chunks for texture.
  7. Stir in the heavy cream and let it simmer for another 15 minutes.
  8. Season with salt and pepper before serving.
