Description

Rosół is a traditional hearty Polish soup made primarily from a chicken broth base. Considered a remedy for various ailments, this soup is perfect when you need something warm, comforting and full of flavor.

Instructions

  1. Thoroughly rinse the chicken under cold water and place it in a large pot.
  2. Add carrots, celery, parsnip, leek, onion, garlic, parsley, peppercorns and bay leaves into the pot.
  3. Pour the water into the pot, just enough to cover the ingredients.
  4. Slowly bring to the boil, then reduce the heat to low and simmer, uncovered, for about 2 hours.
  5. Skim off any foam or impurities that rise to the surface during simmering.
  6. Season with salt towards the end of cooking.
  7. Strain the soup through a fine-mesh sieve into another pot.
  8. Let it cool, then remove any fat that has accumulated on the surface before reheating.
  9. Serve hot, garnished with fresh parsley or dill if desired.
