  1. Start with preparing the light soup. Wash the meat or fish thoroughly. For an authentic taste, use an assortment of cow parts.
  2. Blend tomatoes, pepper, garlic, 1 onion, and Maggi cubes into a paste.
  3. Pour into a pot, add the meat or fish, adding enough water to cover the content.
  4. Add salt, curry powder and half of the ground pepper.
  5. Cook at medium heat for about 30-45 minutes.
  6. In the meantime, let’s prepare the fufu. Add water to the cassava dough, knead the dough with your hands until it starts to look like cream.
  7. Decant the whitish liquid from the dough and pour it into a pot, cook on medium heat, while stirring continuously.
  8. As it cooks, the dough will get firmer and eventually start taking shape; this is your fufu.
  9. Once the meat or fish in the soup is fully cooked, remove the pot from heat, let it cool then blend the entire content till smooth.
  10. Return the blended soup back to heat, add the remaining onion (chopped), check if additional salt or Maggi is needed, let soup simmer for another 10-15 minutes.
  11. Your Fufu and Light soup is ready to serve, enjoy this delicious Ghanaian dish.
