  1. Start by soaking the chickpeas overnight to ensure they soften correctly.
  2. The following day, prepare the mutton by cutting it into bite-sized pieces. Rinse thoroughly.
  3. In a large pot, add the mutton, diced onions, and water. Bring this to a simmer over medium heat, allowing the broth to develop.
  4. Once the mutton is tender, strain the broth into another pot and set aside. Keep the mutton pieces.
  5. In the new pot with the broth, add diced potatoes, chopped bell pepper, and carrot into the pot. Simmer until they start to soften.
  6. Add the tender mutton back into the pot, along with the chickpeas.
  7. Season the soup with dried mint, salt, and pepper.
  8. Finally, add sour plums to the pot and let the soup simmer on a low flame for another half hour.
  9. If using, pour saffron water into the soup 5 minutes before turning off the heat.
  10. Serve hot, garnished with fresh herbs if desired.
