Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the beef chunks and season with salt and black pepper. Cook until browned on all sides.
  3. Remove the beef from the pot and set aside.
  4. In the same pot, add the carrots, celery, and onions, cooking until soft.
  5. Add the minced garlic to the pot and stir, cooking for another minute.
  6. Return the beef to the pot along with the water.
  7. Bring the mixture to a boil, then reduce the heat and let it simmer.
  8. Add the barley to the pot and continue to simmer for about 2 hours, or until the barley and beef are tender.
  9. Garnish with fresh parsley before serving, if desired. Enjoy hot.

Optional step:

If you’re using Worcestershire Sauce, add 1-2 tablespoons alongside the barley.
