Description

Harira is a traditional Moroccan soup brimming with flavors from a medley of herbs, spices, and a hearty mix of lentils, chickpeas, and meat. It’s traditionally enjoyed during Ramadan for breaking fast but is so nourishing it can form a centerpiece of a meal year-round.

  1. Rinse the soaked chickpeas and lentils, drain, and set aside.
  2. In a large soup pot, combine the beef, onion, garlic, celery, tomatoes, parsley, cilantro, turmeric, cinnamon, salt, and black pepper. Stir well.
  3. Add the beef broth to the pot, along with the drained chickpeas and lentils. Bring the soup to a boil over high heat.
  4. Reduce the heat to medium-low, cover the pot, and let it simmer for about 1.5 hours. Stir occasionally.
  5. Stir in the rice and let the soup simmer for another 30 minutes, or until the rice is cooked.
  6. Taste the soup and adjust the seasoning if needed. Serve hot, garnished with optional ingredients if desired.
