  1. Place the chicken in a large pot, enough to cover the chicken. Add chopped onion, carrots, bay leaves, salt, and pepper.
  2. Bring the pot to boil, reduce heat and simmer for about 2 hours until the chicken is well cooked.
  3. Pull the chicken out of the pot, separate the meat from the bones, and shred the meat. Discard the bones.
  4. Return the shredded chicken to the pot. Sprinkle in the chopped cilantro and parsley.
  5. In a separate bowl, beat the eggs until light. Add lemon juice, vinegar, and flour to the eggs and continue beating until well mixed.
  6. Gradually pour this egg mixture into the soup, stirring constantly until well integrated.
  7. Allow the soup to simmer for another 10 minutes until it thickens. Adjust salt and pepper as needed.
  8. Serve the soup hot, optionally garnished with a sprinkle of saffron or red pepper flakes.
