Hungarian Goulash Soup

  1. Start by cutting the beef stew meat into 1-inch cubes. Peel and finely chop the onions and garlic. Dice the tomatoes and bell pepper. Peel and dice the potatoes and carrots into bite-sized pieces.
  2. Heat oil in a large pot over medium heat. Add the chopped onions, garlic, and stir till onions appear translucent.
  3. Add the beef cubes to the pot, brown them on all sides. This gives the meat a rich color and seals in the flavors.
  4. Stir in the Hungarian paprika, caraway seeds, salt, and black pepper. Continue to stir so that the spices are evenly distributed and coat the meat.
  5. Add in the diced tomatoes and bell pepper, followed by the dice potatoes and carrots. Mix thoroughly until every ingredient is coated with the base.
  6. Pour enough water to submerse the mixture, cover the pot, and let it simmer on low heat for approximately 2 hours. Stir occasionally to prevent sticking at the bottom.
  7. For those using, finely chop the red chili pepper and stir in towards the end of the cooking process.
  8. Ladle into bowls, top with a dollop of sour cream if preferred and serve hot.
