  1. Soak the tamarind pulp in warm water for about 15 minutes.
  2. Press and strain the mixture to extract the juice then set aside.
  3. In a pot, sauté garlic and onions in a bit of oil until aromatic.
  4. Add the pork pieces, continuously stirring until they are browned.
  5. Add the sliced tomatoes and stir until softened.
  6. Pour in the tamarind juice and bring to boil.
  7. Add the radish and eggplant, then simmer for about 20 minutes.
  8. Put in the water spinach leaves and stalks, and the green chillies.
  9. Season with salt and pepper.
  10. Cover and simmer for another 5-10 minutes, until ingredients are thoroughly cooked.
