  1. Heat the vegetable oil in a large pot over medium-high heat. Add the beef cubes and brown them on all sides. Remove and set aside.
  2. In the same pot, add the finely chopped onions. Cook until they become translucent.
  3. Add the minced garlic to the onions and continue cooking until fragrant.
  4. Return the beef to the pot and add in the sweet paprika, caraway seeds, and bay leaf. Stir to combine.
  5. Add the diced bell peppers, carrots, and cubed potatoes to the pot. Season with salt and pepper.
  6. Pour the beef broth into the pot, ensuring all ingredients are covered.
  7. Reduce the heat to low, cover the pot, and let it simmer for about 2 hours, or until the beef is tender.
  8. Periodically check the soup, stirring occasionally and adding more broth if necessary.
  9. Once the soup is ready, garnish with fresh parsley and a dollop of sour cream before serving.
