  1. Rinse the pork and chicken bones under cold water.
  2. In a large pot, add the cleaned bones and 4 quarts of water. Begin heating over a high flame.
  3. As the water begins to heat, skim off any impurities that float up to the surface.
  4. Once boiling, add the onion, ginger, garlic and leek to the pot.
  5. Adjust the heat to low and let the broth simmer for at least 6 hours.
  6. During the last hour, season the broth with soy sauce and salt to taste.
  7. In another pot, marinate the pork belly in mirin and soy sauce, then cook it slowly over low heat for 2 hours until tender.
  8. Once the broth is ready, strain it to remove the bones and veggies, leaving a clear, flavorful soup. Keep it hot over a low flame.
  9. Cook the ramen noodles as per package instructions.
  10. Portion the noodles into bowls. Pour the hot broth over the noodles.
  11. Slice the cooked pork belly and place it, along with a boiled egg cut in half, on top of the noodles.
  12. Finally, garnish with sliced green onions and serve immediately.
