  1. Pour water into a pot and set it to boil.
  2. Crush lemongrass, remove the outer layer, and cut it into long pieces. Slice the galangal and crush it slightly. Tear up leaves of kaffir lime.
  3. Once water is boiling, add lemongrass, galangal, kaffir lime leaves, bird chilis, and garlic to the pot. Let this broth simmer for about 20 minutes.
  4. Add mushrooms, tomatoes, and onions to the broth. Let these ingredients cook for about 5 minutes.
  5. Add the prawns and cook until they turn pink. This will take around 2-3 minutes.
  6. Season the soup with sugar, fish sauce, and lime juice, adjusting the quantity to taste.
  7. Garnish with a sprinkle of coriander before serving.
