Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, celery, and garlic. Cook until the vegetables are soft, about 5 minutes.
  3. Stir in the beans, vegetable broth, rosemary, salt, pepper, and bay leaf.
  4. Bring the soup to a boil, then reduce the heat and let it simmer until the beans are tender, about 30 minutes.
  5. If using, add the cooked and diced bacon to the soup.
  6. Remove the bay leaf and the rosemary sprig.
  7. Using an immersion blender, blend about half the soup until smooth. If you prefer a completely smooth soup, blend the whole pot; if you prefer a chunky soup, blend less.
  8. Serve the soup hot, garnished with fresh parsley and optional parmesan shavings.
