  1. In a heavy-bottomed pot, heat the olive oil over medium heat.
  2. Add Italian sausage and break it with a spoon until browned.
  3. Stir in onions and garlic, and sauté until onions are translucent.
  4. Add the thinly sliced potatoes and chicken broth.
  5. Bring the soup to a simmer and let the potatoes cook until tender, about 15-20 minutes.
  6. Pour in the heavy cream and stir.
  7. Add the chopped kale and simmer for another 5 minutes, until the kale is bright green and softened.
  8. Season with salt and pepper. If desired, add the optional ingredients listed above.
  9. Enjoy hot with a side of crusty bread.
