Description

Sopa de Lima is a traditional Mexican soup from the Yucatan region. Packed full of chicken, tangy with citrus from limes, and fragrant with exotic spices, it’s sure to satisfy both the adventurous and the comfort-seeking palates.

Instructions

  1. Rinse the chicken pieces thoroughly and pat dry. Season with salt and pepper.
  2. Heat a large pot over medium heat. Add chicken pieces and brown on all sides. Remove and set aside.
  3. In the same pot, add onions and garlic. Sauté until soft.
  4. Stir in tomatoes, lime juice, oregano, cumin, and habanero (if using). Cook until tomatoes break down and mixture becomes fragrant.
  5. Add the chicken pieces back in the pot. Pour in chicken stock.
  6. Bring the soup to a boil. Lower the heat, cover, and simmer for about 1 hour.
  7. Once the chicken is cooked, remove from pot, shred, and return to the soup. Adjust seasoning as needed.
  8. Ladle the soup into bowls. Squeeze a wedge of lime into each bowl, and garnish with fresh cilantro.
