  1. In a large pot, heat the vegetable oil over medium heat. Add the onion, carrots, and beetroot. Sauté until vegetables begin to soften.
  2. Stir in the tomato paste, garlic, sugar, and vinegar. Continue cooking for another 2 minutes.
  3. Add the vegetable broth, potatoes, and optional smoked sausage or red bell pepper if using. Season with salt and pepper.
  4. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 15 minutes, or until the potatoes are tender.
  5. Add the shredded cabbage and kidney beans if using. Simmer for another 15 minutes.
  6. Adjust the seasonings to taste, adding more salt, pepper, or vinegar as needed.
  7. Serve the borscht hot, garnished with fresh dill and a dollop of sour cream on top.
