Description

Caldo Verde is a classic Portuguese soup made primarily with potatoes, collard greens, and chorizo. This hearty soup is often served as a comforting home-cooked meal that warms you from within, perfectly suited for cold winter months.

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until they become soft and fragrant.
  2. Add the diced potatoes to the pot and cook for a couple of minutes.
  3. Pour in the broth and ensure all the potatoes are fully submerged. Bring to a boil then reduce to a simmer. Cook until the potatoes become soft.
  4. While the potatoes are cooking, in a separate pan, cook the chorizo until brown then set them aside.
  5. Once the potatoes are soft, use an immersion blender to puree the soup until smooth.
  6. Stir in the kale or collard greens, allowing them to wilt in the hot soup. If desired, add your optional ingredients at this point.
  7. Stir in the cooked chorizo, simmer for another 10-15 minutes until the greens are fully cooked.
  8. Season the soup with salt, pepper, and if desired, smoked paprika.
  9. Serve hot, enjoy the comfort of Portuguese traditional home cooking at your table.
