Chicken Corn Soup

  1. Heat the oil in a large pot over medium heat. Add the onions and garlic, sauté until they’re soft and fragrant.
  2. Add the chicken breasts to the pot and season with salt and pepper. Cook until the chicken is no longer pink in the middle.
  3. Remove the chicken from the pot, shred it with two forks, and set it aside.
  4. In the same pot, add the corn and chicken broth. Bring to a boil.
  5. Once the soup is boiling, slowly add the beaten eggs while stirring the soup. The eggs will cook instantly and create small strands in the soup.
  6. In a small bowl, mix the flour with enough water to form a smooth paste. Slowly pour this into the soup, stirring continuously, to thicken the soup.
  7. Return the shredded chicken to the pot and let the soup simmer for another 5 minutes.
  8. Adjust seasoning with salt and pepper, sprinkle with chopped parsley before serving.
