  1. Tear up the loaf of day-old bread into rough chunks, set aside.
  2. Heat olive oil in a large pot over medium heat.
  3. Add onions, carrots, and celery. Sauté them until they are soft and released their sweetness, around 5 minutes.
  4. Add the minced garlic, stir until fragrant, around 1 minute.
  5. Sprinkle the dried basil and oregano, stir for another minute to release their aroma.
  6. Pour the chicken broth and canned diced tomatoes into the pot.
  7. Bring the soup to a boil, then reduce the heat to low.
  8. Add the chunks of bread into the pot, stir until they are fully soaked.
  9. Cover the pot and let the soup simmer for around 20 minutes.
  10. After 20 minutes, use a spoon to break up larger chunks of bread.
  11. Continue to simmer, stirring occasionally, until the bread chunks have completely broken down and the soup has thickened to your desired consistency.
  12. Season with salt and pepper to taste.
  13. Ladle the soup into bowls and garnish with fresh parsley. For those who prefer more flavors, sprinkle with grated parmesan cheese or red pepper flakes.
  14. Serve hot.
