  1. Start by melting the butter in a large pot, then sweat the leek until they become soft, don’t let them brown.
  2. Add water, bay leaves and the peppercorns. Then follow with your diced potatoes.
  3. Let the mixture reach a simmer and let it be for about 15 minutes or until the potatoes are almost fully cooked.
  4. Expel any impurities that rise to the top with a ladle, keep the soup as clear as possible.
  5. Slip in your salmon chunks and let the soup gently simmer for additional five minutes.
  6. Now, stir in the cream and fresh dill, and season with just enough salt.
  7. Give your soup a soft simmer for another two minutes, then set it aside to rest, making sure all flavors beautifully infuse together.
  8. Serve your classic Lohikeitto hot, with a side of wholesome rye bread if desired.
