  1. Rinse and pat dry the chicken parts. Dice the onion, carrot, celery, and garlic.
  2. In a large pot, simmer chicken, vegetables, lemongrass, ginger, and salt with enough water to cover.
  3. Skim the fat off the top as it accumulates during the cooking process.
  4. Allow to simmer till the broth is flavorful and reduced by a third, ideally for around 1 to 1.5 hour.
  5. Strain the broth and shred some of the cooked chicken for the soup, discarding the bones and vegetables.
  6. Return broth to the pot. Stir in coconut milk and shredded chicken until fully heated, about 10 minutes.
  7. Ladle the soup into bowls. Garnish with cilantro leaves, and serve with fresh lime wedges on the side.
