Instructions

  1. Rinse and drain the lentils.
  2. In a large pot, heat the olive oil over medium heat. Add the onion, carrot, celery, and garlic. Sauté for about 5 minutes until the vegetables are softened.
  3. Stir in the cumin and thyme, coating the vegetables evenly.
  4. Add the dried lentils, stir to combine with the vegetables.
  5. Add the broth and diced tomatoes (with their juices), bring the mixture to a simmer.
  6. Reduce heat to low, cover the pot, and let it simmer for about 30-35 minutes, or until the lentils are tender. Stir occasionally to prevent from sticking.
  7. Once the lentils are tender, season with salt and pepper. If using optional ingredients, stir in now.
  8. Remove from heat and serve hot.
