Description

Sheer Korma, or ‘milk with dates’ in Persian, is a rich and creamy dessert soup hailing from the Middle-Eastern and Indian subcontinent region. Mostly prepared during the festive occasions like Eid, this sweet delicacy is a warm blend of milk, sugar, and a bevy of nuts and dried fruits, topped with a crown of flavorful spices.

Instructions

  1. Start by heating the ghee in a heavy bottomed-pan over medium heat.
  2. Add the vermicelli and roast until it becomes golden brown.
  3. In another pot, add milk and bring it to a boil.
  4. Add the roasted vermicelli to the boiling milk and continue to stir till the vermicelli is fully cooked.
  5. Add the sugar and keep stirring until it dissolves completely.
  6. Now add all the nuts (almonds, cashews, pistachios, and raisins) followed by the deseeded, chopped dates.
  7. Next, add the saffron strands and cardamom powder and stir well.
  8. Reduce the heat to low and let the milk simmer until it thickens.
  9. Switch off the heat and let the soup stand for a few minutes to absorb the flavors completely.
  10. Serve Sheer Korma warm or chilled, as per personal preference.
