  1. Rinse the dried black beans under cold running water, checking for any stones or impurities.
  2. Heat olive oil in a large pot over medium heat, add the onion, garlic, carrots, celery, bell pepper, and sauté until the vegetables are softened.
  3. Stir in the salt, black pepper, cumin, oregano, and bay leaf until the vegetables are well coated.
  4. Add the cleaned dried black beans to the pot followed by the water or broth.
  5. Bring the soup to a simmer, cover the pot with a lid slightly ajar and simmer for about 2 hours until the beans are tender.
  6. Check the soup occasionally and add more water or broth if necessary.
  7. Once the beans are cooked, taste the soup and adjust seasoning if needed.
  8. Optional: Using a blender, pulse some of the soup to create a thicker texture.
  9. Serve hot with optional ingredients, as desired.
