  1. Rinse the rice under cold water until the water runs clear. This helps to remove any excess starch that might cause stickiness.
  2. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrots, and celery, then sauté until the onion becomes translucent.
  3. Add the rice and sauté for a few minutes until it becomes slightly toasted. This step will give the soup a slight nutty flavor.
  4. Pour in the vegetable stock and bring the soup to a boil. Add the salt, pepper, and bay leaf (if using).
  5. Lower the heat to a simmer, cover the pot, and let it cook for about 30 minutes, or until the rice is fully cooked.
  6. If you’re using chicken, add it to the pot and let it heat through.
  7. Just before serving, stir in the fresh parsley and adjust the seasonings if necessary. If you’re using lemon juice, add it at this point.
