Description

Instructions

  1. Combine tomatoes, bell peppers, cucumber, garlic and onion in a large bowl.
  2. Transfer half of the mixture to a blender or food processor. Blitz until relatively smooth.
  3. Add the olive oil, vinegar, salt and pepper to the blender. Continue to blend until fully integrated.
  4. Pour the blended mixture back into the bowl with the remaining diced vegetables.
  5. Stir well, ensuring everything is mixed.
  6. Cover the mixture and refrigerate for at least 2 hours for flavors to develop.
  7. Serve cold, garnished with optional ingredients if desired.
