  1. Brown the chicken thighs in a large pot with a bit of oil over medium heat.
  2. Remove the chicken and set it aside.
  3. In the same pot, sauté garlic and chopped shallot until they become fragrant.
  4. Stir in the Khao Soi paste, cook for about a minute.
  5. Return the chicken to the pot, add chicken broth, coconut milk, fish sauce, palm sugar, and soy sauce.
  6. Bring to a simmer and let it cook for about 30 minutes, stirring occasionally.
  7. While the soup cooks, prepare the egg noodles according to the package instructions.
  8. Once the chicken is cooked and tender, remove it from the broth, shred it and set it aside.
  9. Ladle the broth into bowls, top with egg noodles, shredded chicken, chopped cilantro, and sliced red onions.
  10. Serve with a lime wedge and optional ingredients as you wish.
