  1. Heat olive oil in a large pot over medium heat; sauté onion, garlic, and ginger until onion is translucent.
  2. Add the carrots to the pot and continue to sauté for about 5 minutes, or until the carrots start to soften.
  3. Pour in the vegetable broth, bring to boil. Then, reduce the heat and let it simmer until the carrots are tender.
  4. Once the carrots are thoroughly cooked, blend the mixture until smooth using either an immersion blender or a stand blender.
