Description

Khash is a hearty and flavorful soup believed to be of Armenian origin. Traditionally, it is slow-cooked overnight to fully extract the flavors from the primary ingredient, beef feet. The resulting soup has a rich, velvety broth with a robust flavor that is both nourishing and comforting.

  1. Thoroughly clean the beef feet by scrubbing them under running water. Pay special attention to the hooves, making sure they are clean.
  2. In a large pot, bring the beef feet and water to a boil over high heat. Simmer for about 15 minutes to allow the impurities to rise to the surface.
  3. Drain the water from the pot and wash the beef feet well. Clean the pot of any residues before returning the beef feet back in.
  4. Refill the pot with clean water and bring to a boil.
  5. Lower the heat, cover the pot and let it simmer for about 8-10 hours, or until the broth is thick and the bone marrow is easily falling off the bones.
  6. Add a whole garlic and salt to the pot about an hour before finishing the cooking process.
  7. Once fully cooked, season the soup to taste and garnish with fresh herbs before serving.
